I ran out of recipe ideas! Now, how did you manage that Aliah, you ask? Well, It’s just that there is so much choice. I just didn’t know where to start. Seriously, Pinterest may look like it helps, but no. It does not. You start off looking at a million different recipes for the same type of cookie then end up on how to knit a teddy bear. Then it gets you to contemplate about actually knitting one. So, this weeks recipe choice was my mums. Drum roll please. I introduce you to the most yummy, fruity and nutty flapjacks you will ever taste.
These are filled to the brim with apricots, cranberries, pecans and raisins. The cranberries add a great tartness (and colour), while the pecans give you that delectable crunch. I added a handful of chocolate chips to the top when they came out of the oven, so they melted perfectly. Adding the white chocolate just adds that extra wow factor, and makes them even more irresistible.
These are ridiculously easy to make. It’s just a matter of mixing all the ingredients together. If you have a craving for something moreish, then these are perfect as they’ll be ready in half an hour. If that (and my awesome use of adjectives) isn’t enough incentive to make these, then I don’t know what is.
To be honest, you could add whatever you wanted to this recipe. If you want more or less of any ingredient, then don’t hesitate to change it up. It’s a pretty versatile recipe. Drizzle with honey, add more chocolate, or even different nuts.
90g brown sugar
55g golden syrup
100g rolled oats
30g Rice Krispies
1/4 tsp salt
40g desiccated coconut
30g chopped dried apricots
40g chopped pecans.
1- preheat the oven to 170 degrees celsius
2- line a 20cm square tin with parchment paper
3- melt the butter with the brown sugar and golden syrup over medium heat. Be careful to not burn it.
4- remove the butter mixture from the heat and add in the remaining ingredients.
5- spoon into the tin, and press into an even layer with the back of a spoon
6- bake for 25 minutes, or until the edges become golden
7- cool in the tin completely
8- cut into 12
